Atmosphere
Blink Bonnie’s in St. Germain does not take reservations, and during peak Northwoods season, that matters. Summer weekends can mean a long wait and a crowded bar. Locals know the drill. Tourists learn quickly. Those with patience are rewarded, though.
Inside, the walls are lined with mounted deer heads and game birds — classic Northwoods décor that leaves no doubt about where you are. The bar fills early with diners nursing Old Fashioneds while watching servers thread through the room with sizzling platters. It’s busy. Loud at times. Energetic. This is steakhouse country.
Old Fashioned
The Old Fashioned arrives in a heavy rocks glass, glowing hazy amber under cabin lighting. Brandy-forward and sweet-leaning, with muddled fruit settling at the bottom. Smooth enough to pass the time while waiting for your table. Not overly complex. Just a dependable Badger State staple that keeps the bar humming.
Starters
The warm bread loaf deserves its own paragraph. It arrives on a wooden board with a separate steak knife for slicing — dense, golden, and slightly sweet. A small detail, but a good one. Tear off a piece, add butter, and settle in.
Entrees
The ribeye is the main attraction. It lands on an oval sizzle platter, popping and hissing as it hits the table. A deep mahogany crust gives way to a warm pink center, marbled and bold. Juicy resilience in every bite. This is what Blink Bonnie’s does best.
The filet arrives thick and neatly trimmed, crowned with melted blue cheese that forms a lightly browned crust. Leaner than the ribeye but still tender, it cuts easily and delivers a clean, refined beef flavor.
A neighboring table’s prime rib drew attention as it passed — a hefty slice with a rosy interior and dark outer rim, carried confidently through the crowded room.
Hash browns come out properly crisp, browned hard on the outside and soft inside. Loaded with cheese and served hot. For some, they compete with the steak for attention.
Not every plate hits the same level. Walleye can lack the shatter-crisp crunch and clean sweetness Wisconsin diners expect. Chicken trends dry. And on busy nights, steak temperatures occasionally miss their mark.

Blink Bonnie’s has built its reputation on beef, and for steak lovers in the Northwoods, it remains a destination. The trophy-lined walls, packed bar, and sizzling platters create exactly the atmosphere regulars crave. Prices reflect the popularity, and the no-reservations policy requires patience.
